Potatoes

About me: Everyone loves a good potato. They are high in vitamin C, B6, and potassium. Make your own french fries, delicious in stews, soups, gratins, and vegan cheese recipes! At Catena Farm we grow four types of potatoes. Sweet potatoes, new potatoes , fingerling and storage potatoes. New potatoes have not been 'cured', which means they will not store very long. They are usually smaller in size and are great in potato salads! Storage potatoes have been 'cured' and will store several months. We have several varieties of sweet potatoes that we grow. Some have the usual pink flesh and some are a bit more white. These have a wide range of sweetness and flavours to them!

We don't wash our potatoes because it helps them store longer. If the potatoes seem a bit moist from the soil when you get them, let them dry out on the counter before storing. 

To store: Keep unwashed potatoes in a cool, dark, dry place, such as a loosely closed paper bag in a cupboard at room temperature. Moisture causes potatoes to spoil, light turns them green, and proximity to onions causes them to sprout. Don’t put them in the refrigerator, as low temperatures convert the starch to sugars.

To Freeze: Potatoes freeze best when mashed. Wash, boil, mash 'em and freeze 'em.
