About me: Everyone loves a good potato. They are high in vitamin C, B6, and potassium. Make your own french fries, delicious in stews, soups, gratins, and vegan cheese recipes! At Catena Farm we grow three types of potatoes. New (or baby) and fingerling at the beginning/middle of the growing season, and storage potatoes near the end of the season.
To store: Keep unwashed potatoes in a cool, dark, dry place, such as a loosely closed paper bag in a cupboard. They will keep for several weeks at room temperature. Moisture causes potatoes to spoil, light turns them green, and proximity to onions causes them to sprout. Don’t put them in the refrigerator, as low temperatures convert the starch to sugars.
To Freeze: Potatoes freeze best when mashed. Wash, boil, mash 'em and freeze 'em.
