About me: Bok Choy is a traditional stir-fry vegetable from China. Bok Choy grows in elongated, upright heads of dark green leaves with large, white stems. All parts of the Bok Choy (leaves and stem) are deliciously edible. Bok Choy can be used in a stir-fry, raw in a salad, sliced in half and grilled, or used in a fermented kimchi. This is a cool-season crop, so you’ll only see it in the shoulder seasons of the spring and fall.
To store: Bok Choy should be stored in a cotton care bag, or paper towel, and then placed inside a reused plastic bag, or container inside your fridge crisper. Store for about a week.
