Simple Maple + Brussels Sprout Salad
Makes 4 small portions

 

Ingredients

For the maple dressing

1/3 cup extra virgin olive oil

¼ cup maple syrup

2 tbsp Dijon mustard

2 tbsp white wine vinegar

1 tbsp yellow mustard

½ tsp salt

1/8 tsp pepper

 

For the salad

300g brussels sprouts, end removed, and thinly shredded and washed

200g (about 2 large) carrots, grated

¼ cup raisins

1/8 tsp salt

 

Preparation

For the creamy maple dressing

Whisk all ingredients together and set aside.

 

For the salad

Thinly slice your brussels sprouts after all the ends have been removed and any bad outer leaves discarded. Rinse with water and drain.

Place in a large bowl and combine sprouts with dressing. Allow to sit for 30 minutes.

Meanwhile, grate carrots using a food processor or cheese grater. Place in a strainer with a bowl underneath and mix in 1/8 tsp salt. Let sit for 15 minutes. After 20 minutes squeeze out as much excess liquid as you can.

After 30 minutes is up for the brussels sprouts, mix in carrots and raisins. Season to taste with salt and pepper.
