Grilled Zucchini Scallion Salad

 

Ingredients

For the dressing

6 scallions, grilled then minced

Juice from 1 large lemon

2 tbsp olive oil + extra for brushing

¼ tsp garlic powder

1/8 tsp sweet paprika

 

For the salad

2-3 zucchinis, end removed and sliced lengthwise about ¼ inch thick

3 cups cooked chickpeas

1/3 cup feta cheese

¼ cup almonds, crushed

Zest from 1 organic lemon

3 fresh scallions, chopped

 

Preparation

For the dressing

Preheat the BBQ to a medium heat.

Brush 6 scallions with some olive oil and place directly on the grill. Grill a few minutes, slipping halfway through and once they have a nice char remove from grill. Leave the grill on the same temperature for the zucchini.

 

Once scallions are cool, mince.

 

Whisk the lemon juice, 2 tbsp olive oil, garlic powder, and sweet paprika. Stir in minced scallions and set aside.

 

For the salad

Slice zucchini lengthwise and brush with a little oil. Place sliced zucchini directly on the grill and sprinkle with sea salt and fresh black pepper. Grill for a few minutes and flip. Remove once the slices have nice grill marks. Allow to cool and chop into bite sized pieces.

 

In a large bowl add the chickpeas and then stir in dressing.

 

Fold in the grilled zucchini and add chopped almonds and crumble in feta cheese. Top with chopped fresh scallions and lemon zest.
