Bean and Zucchini Salad
Makes 4 Portions
3 small zucchinis, sliced into ¼ inch thick rounds, or lengthwise
1 bunch French beans, trimmed
2 TB olive oil
Juice from 1 lemon
2 tsp lemon zest
1/3 cup chopped parsley
1/3 cup crushed, or whole almonds
1/4 block of feta
salt and black pepper to taste
Start BBQ on low heat.
Add beans (with top trimmed off), and sliced zucchini to a bowl and toss with 1 TB olive oil. Season with salt and pepper.
In a small bowl combine the other tbsp of olive oil, the chopped parsley, lemon juice, and lemon zest. Set aside.
Once grill is hot place the beans and the zucchini on the grill and cook until slightly charred - turning once.
After the veggies are charred, mix with the lemon and parsley oil and serve at a warm temperature.
Add feta and chopped almonds on top for garnish.
