Red Giant Mustard Greens
About Me: We grow many types of mustard greens at the farm and Red Giant is one of our favourites. We grow to both baby and full size. The baby size is a great addition to salads whereas the full grown size is awesome is soups, creamed with coconut milk, or sautéed with a bit of garlic and lemon. Mustard greens are packed with energy-boosting, heart-healthy, disease-fighting nutrients. These greens are a delicious source of calcium, magnesium, folic acid and vitamin K, important for bone health.
To store: Keep dry, unwashed greens in a mesh bag, then covered with a reused plastic bag or container in the refrigerator up to 2 weeks.
To freeze: We recommend only freezing the full sized greens as the baby ones are too tender. Blanch washed greens for 2-3 minutes. Rinse in cold water to stop the cooking process, drain, and pack into airtight containers, and freeze.
